Castries, Lets Make Chocolate
Once considered the dessert for monarchs and aristocrats, chocolate has since filtered through to the mainstream.  The tree to bar chocolate class at Howelton Estate features the use of St. Lucia's trinitario cocoa beans, which are treasured by renowned chocolatiers for their aromatic indulgencis on one’s senses. The class will begin with the manual grinding of cocoa nibs which have been broken down from dried trinitario beans grown on the island.  With the use of a mortar & pestle, class participants under the guidance of the house chocolatier, grind nibs until they transform into liquefied chocolate. The breakdown process can take up to 45 minutes adding in personal touches of desired flavors along the way, which makes each chocolate a unique signature bar. Throughout the class, information on the multiple benefits of the trintario chocolate is disseminated as dark chocolate is renowned for its fascinating health benefits. There is a 20-minute cooling down period to allow the liquefied chocolate to solidify after it has been put into its mold. The break will allow time for taking in the amazing views of the city, while enjoying a beverage from the Cellar Bar or browsing the duty free gift shop among other options. After the break, class will resume and the end result will be a beautiful 1.8 ounce (50 grams) dark chocolate bar that is foil wrapped and can be taken home as perhaps the most distinctive souvenir of St. Lucia.

You’ll ride along the inviting, narrow cobblestone streets and through squares inside the walled city, admiring the flower-filled balconies that glow in the light spilling from colonial mansions. Stop for 10 minutes to photograph the Fort of San Felipe de Barajas, a 17th century construction acknowledged to be the most important work of Spanish Military engineering in Latin America. Surrender to the majesty of this historic city, where age-old squares are surrounded by towering colonial, Republican and Spanish-style buildings—it’s easy to picture life 200 years ago in this wealthy and cosmopolitan city. Visit the former city dungeons at Las Bovedas, which have also been used as military barracks, a munitions depot and a jail, but today local artisans display their work there. You’ll have 15 – 20 minutes for shopping before returning to the ship.

Please note: Guests who wish to remain in town to shop can return to the ship on their own later in the day.

Colon, Agua Clara Visitor Center with Transfer to Airport
Your tour will begin by taking you to the impressive Agua Clara Visitor Center located on the Atlantic side of the Panama Canal. With an unparalleled view, this place will be waiting for you and all those who want to enjoy a pleasant experience enriched with interesting facts, but especially by being part of the history of the route that unites the world. The center offers a breathtaking panoramic view that contrasts two particular scenarios that generate mixed feelings. On one side you will find the famous Gatun Lake, where cargo ships or other vessels transit every day, while on the other side, but from a different perspective, you will be amazed by seeing how the giants of the sea, called Neo-Panamamax vessels, go through the new set of locks. After the impressive viewpoint, pamper yourself and be captivated by all those things that the Agua Clara Visitor Center has to offer. At the projection room you can learn about the history and efforts of thousands of men and women that have marked the Canal's first century and, of course, plans in the near and distant future. Throughout your visit, peruse the walls and exhibits with interesting information that will amaze you. Walk through the ecological path, with a variety of plants and species that make the trail an adventure with great scenery and breathtaking views. Identify the different species gathered there that are indigenous to this area of the Canal watershed. At the end of this tour, you will be transferred to the International airport.

Please note: Wear comfortable clothes and shoes, and bring a camera, hat, sunscreen, and sunglasses. This tour is available for guests with flights after 5 p.m.

Colon, Embera Village & Agua Clara Expansion Visitor Center with Airport Transfer
You will head to the Agua Clara Expansion Center, where you will take a tour and see history being rewritten all over again at the Panama Canal with its expanded capacity to allow for more than double the traffic, with the third set of locks, larger and wider than the existing ones. The Panama Canal has played an integral part in history as it provides travel between the Pacific and Atlantic Oceans without having to sail a greater distance and through perilous Cape Horn. After this tour you will head to Buena Vista. There you will board a small dugout, which will carry you up the Gatun River to discover a large, fascinating and dense jungle.  You will arrive at the Embera Quera, an indigenous community found on the banks of Gatun Lake, near the Panama Canal. The Embera tribe still lives in harmony with Mother Nature. They will welcome you at the pier and gladly give you an idea of how they still live today. The village chief will give you a brief explication on the history of the tribe, its traditions, cultures, beliefs and handicrafts. Then, a traditional lunch of fish and plantains prepared by the Embera women will be served to you. In the afternoon you will watch a traditional Embera dance and also have a chance to shop for colorful handicrafts. The sale of local products directly benefits the village and helps to pay the school fees for the children. You can also get a temporary Embera tattoo painted on your arm or leg, using an ink made from a local fruit.  At the end of this tour, you will be transferred to the airport.

Please note: This tour is not recommended for those with mobility issues.  Wear comfortable walking shoes, sunscreen, insect repellent, and a hat.
