Moroccan cuisine is considered one of the most important cuisines in the world. The cuisine of the first inhabitants, the Berbers, still exists today in the staple dishes like tagine and couscous.  The Arab invasion brought new spices, nuts and dried fruits, and the sweet and sour combinations that we see in dishes like tagine with dates and lamb. The Moors introduced olives, olive juice and citrus while the Jewish-Moors left behind their sophisticated preserving techniques that we see in the frequent use of preserved lemons, pickles, etc.  The Ottoman Empire introduced barbecue (kebabs) to Moroccan cuisine. The French colony, although short-lived left behind a culture of cafes, pastries, and even wine.  Over time, cooks in the kitchens of the five royal cities (Fez, Marrakesh, Meknes, Tangier and Rabat) have developed and perfected the dishes that blend each of these distinct tastes. Every Moroccan dish has its place in society and varies with the market, the season, and the region. Your first stop will be the Grand Socco, home to a cavalcade of color, charm, street musicians, a fish market, scenic handicrafts, and spices. You will then proceed to Blue Door Hotel Cooking Classroom, where you will be welcomed with Moroccan tea followed by a cooking lesson of a very traditional Moroccan dish,  learn how to make the traditional Moroccan bread and take it to a local oven. In the meantime, while waiting for the bread, you will learn how to make and serve a real Moroccan tea. Once food is ready, enjoy lunch and this authentic experience. Depart for your ship  with the knowledge needed to impress at your next dinner party.

Tangier, Lixus Roman Ruins, Larache & Azilah
Board your coach and drive to the town of Larache approximately 2 hours away from Tangier on the north of Morocco’s Atlantic coast. En-route, you will make a stop at the Ruins of Lixus. The ruins of the ancient city of Lixus serve as a fascinating reminder of the area’s past. These Roman ruins, a popular attraction in Morocco, are set in a very picturesque area on a hill with the Loukkos River winding through the open fields and marshes below and forested hills to the north.  The site of the Ruins of Lixus was extensively excavated between 1948 and 1969, during which time some restoration took place. One of the large mosaics discovered represented Poseidon – the Greek god of the sea, horses and earthquakes. These excavations covered approximately 20% of the 75-hectare area of the Lixus ruins. Continue to Larache for a short walk through the old medina before savoring a local lunch. After lunch, continue to Azilah. Throughout history, the small coastal city of Azilah has been coveted by both Portugal and Spain, and thus has been a longstanding scene of great bloodshed. The city is well known for its enormous cultural and artistic contributions to Morocco’s history. Every summer, the international festival of Azilah attracts thousands of people from all over the world. Take a walk through the old town with its narrow streets to learn about Azilah’s fascinating history.  It is one of the most beautiful seaside resorts on Morocco’s Atlantic coast, especially during the summer, with so many quiet places, Mediterranean architecture of the houses (painted in white and blue), the gentleness of its people, the museums, and the street-artists from around the world.  After visiting this beautiful town you will enjoy a refreshment stop at a local resort before returning back to Tangier.

Tangier, Tangier on Foot
Tangier is a fascinating city to visit and contrary to popular belief the movie Casablanca was based on Tangier, not Casablanca. It is an interesting mix of North African, Spanish and French cultures.  Your coach will take you on a 30-minute drive to the entrance of the Kasbah of Tangier.  Walk inside the Kasbah and  then you  will head uphill to an area barely changed since Roman times. Back down the hill you will find yourself in one of Tangier’s most colorful and bustling areas, the Grand Souk. It is the link between the medina and the new city. You will stop at the Continental Hotel for a refreshment before boarding your coach for the return trip to your waiting ship.

Tangier, Tantalizing Tangier & Tetouan
Disembark the ship and depart by air-conditioned coach for a drive to St Andrew's Church. The Lord's Prayer is inscribed in Arabic around the chancel arch, which is built on land given to the government of the Queen of Great Britain - Queen Victoria - by the Sultan Moulay Hassan I in 1883. A century earlier Morocco had been the first country in the world to recognize the independence of the United States of America. Your guide will lead you into one of Tangier's most colorful and bustling areas, the Grand Socco (Souk). It is the center of things and the link between the medina and the new city.  From here your guide will lead you to the American Legation Museum, which documents the history of the relationship between the United States and Morocco. Among several displays, there is a letter from George Washington to Moulay Abdellah. You will then drive to Tetouan, and upon arrival, enjoy a typical Moroccan lunch in a beautiful Riad in the Old Medina of Tetouan. After lunch you will tour the old Royal Palace, a 17th century building closed to public entry but its main ornate gate Bab Er-Rouah can give you a mental idea of what is beyond. Hassan II Square is situated where the historic and modern parts of the city converge to create the heart of the town. Join a guided walk through the Medina which is a UNESCO World Heritage Site. You will have the opportunity to visit the Bab Akla School of Traditional Arts and Crafts. Tetouan’s famous School of Plastic Arts, the first of its kind in Morocco, has produced some of Morocco’s best painters over the past half century. The city stands out for the beauty of these traditional arts including embroidery, cuisine, zullayj or mosaics, and carved and painted wooden objects. The scholars of the school are all children that come from disadvantaged backgrounds and the skills learned give them a new opportunity for success in their future. Tangier, Tetouan UNESCO World Heritage
Tetouan is a Berber name which literally interpreted means "the eyes" and figuratively "the water springs."  The town features a fort, squares, mosques, fountains, taverns, and one of the Kings palaces. You will depart by motor coach on a guided orientation drive through the city of Tangier en-route to Tetouan, an hour away. Tangier, The Best of Chaouen
Tangier is a fascinating Moroccan city to visit. It has many of the things that travelers love – a sense of exotic mystery, interesting history, beautiful vistas, unspoiled beaches, and friendly people. It is an interesting mix of North Africa, Spanish, and French cultures. You will have a 2-hour drive via Cap Malabata and Tetouan toward Chefchaouen for some sightseeing.  You will start your tour with the inside visit of the Old Kasbah in the medina. The Kasbah of Chefchaouen was built in the early 18th century by the legendary ruler Moulay Ismail. It is fairly simple without architectural surprises however it is surrounded by gardens on the interior and exterior. Inside the Kasbah, you can visit the ethnographic museum containing antique weapons, musical instruments, and photographs of the old town. You will explore the blue-washed town (old medina) by foot along with your guide who will share stories of Chefchaouen’s history. You will have a photo stop to take pictures of a panoramic view of the Hispanic flavored town lined with blue and whitewashed houses, tiny balconies, tiled roofs and patios embellished with citrus trees.  Visit the cobbled main square, Plaza Uta el- Hammam where you will have some free time for shopping and where the striking 15th century Grand Mosque sits. The Mosque and its nearby buildings were built by Jewish refugees, who alongside Muslims escaped the Spanish persecution to Chefchaouen.  Enjoy Moroccan mint tea at a local venue while your guide shows you this unique city.  You will have lunch at an authentic and charming restaurant before returning to Tangier.

Malaga by Segway
Some things are just plain fun and riding a Segway around Spain definitely falls into that category. It takes a few minutes to get the hang of it; then you'll never want to get off! You'll begin your ride (after an introduction to the operation of the Segway) at Plaza de la Marina, in the center of Málaga. Continue to Larios Street, the main shopping avenue of the city, then on to Merced Square, at the end of Calle Alcazabilla, to see the obelisk erected as a tribute to General Torrijos, currently the headquarters of the Picasso Foundation. Next you will ride to the Santiago Church, built on the site of a former mosque and Málaga's oldest church (founded in 1490). You’ll also visit the Roman Theatre, discovered in 1951, which was built in the time of Caesar Augustus and used until the 3rd century A.D. After that time, it was used as a quarry by the Moors to restore the Alcazaba, which is the next stop on your tour. This impressive building, constructed mainly in the 11th century, was the palace/fortress of the ruling Muslims. Cartagena Highlights and the Roman Theatre
Discover a cultural legacy spanning more than 3,000 years as you explore the sights of Cartagena accompanied by an experienced guide. Visit the impressive Roman Theatre and its Museum, whose discovery and excavation provided valuable archaeological insight into the important role of Cartagena in Old Spain’s (Hispania Antigua) history. Your next stop is the Maritime Wall, from where you will see magnificent harbor views as you stroll toward Town Hall Square and the city’s main avenue. Your walking tour will show you the impressive late 19th century modernist architecture. Before returning to the yacht, you will take a 30-minute visit to the archaeological site of Muralla Punica and discover the surviving remnants of the old Punic Wall that once protected the city during the Cartagines’ occupation. A short 15-minute drive will return you to the yacht.

Cartagena on Foot & Tapas Tasting
One of Cartagena’s greatest treasures is its tasteful and colorful cuisine. Just a few kilometers from the Port of Cartagena, this beautiful hacienda will delight you with the magnificent steeds of the ranch, pure Spanish-bred horses with fine bloodlines and a graceful appearance. You are invited to enjoy a superb sightseeing tour in the charming province of Murcia. Departing from Cartagena by motor coach you will journey for one hour through the foothills of the Sierra de Carrascoy. Your destination is the capital of the province – Murcia. Leaving the pier by motorcoach, you will head to the city on a panoramic drive towards the main venues before getting to the bike shop. Be outfitted and get a briefing before heading out to explore Valencia's old & new. Passing the Turia Gardens and heading towards the Serrano Bridge and Towers the main entrance for the old wall part of Valencia. Inside you will be seeing the Cathedral and Plaza de la Reina, the narrow streets of the Old Town and the Central Market, an enormous metal, ceramic tile and glass Art Nouveau building built in 1928, with its 1,300 stalls of fresh fish, meat and fruits, selling products from all over Spain. Then see the spectacular façade of the Silk Exchange, a late Valencian Gothic style civil building which dramatically illustrates the power and wealth of one of the great Mediterranean mercantile cities. It was built between 1482 and 1548, and declared an UNESCO site in 1996; nowadays it is one of the principal tourist attractions in the city. Then you will cross the "De la Mar" Bridge, heading to the "City of Arts & Science" complex (CAC), along the former bed of the River Turia, this complex was designed by Santiago Calatrava and Félix Candela. The City of Arts and Sciences is a unique complex devoted to science, technology, nature and art joining together the Hemisfèric, the Umbracle, the Príncipe Felipe Sciences Museum, the Oceanogràfic and the Palau de les Arts. Bike by in the complex’s gardens and once finished you’ll drop your bikes off at the shop and will be taken back by motorcoach to the pier.

Palma is the capital of the Balearic Islands and lies on the southeastern coast of Palma de Mallorca Island. A wealth of architectural highlights awaits you. Board your coach and travel to your first stop at the circle-shaped 14th century Bellver Castle, one of the world’s very few rounded castles and the only one of its type in Europe. Built in military-influenced Gothic style, it lies atop a hill affording expansive panoramic views over the city and surrounding countryside.  You will travel on to the handsome 13th century La Seu Cathedral, which presides over the city and is one of Europe’s finest examples of pure ecclesiastic Gothic architecture. After exploring the Cathedral’s interior you will view the exterior of the adjacent Almudaina Palace. This austere palace was originally an Arab fortress and later the palace of Majorcan kings. Before returning to the yacht you will stop to see the unique style and architectural engineering of the city’s famous bullring.

Palma de Mallorca, Valldemossa Village & Chopin with Tasting
A short motor coach drive past olive trees and local vegetation brings you to the quaint 14th century village of Valldemossa, located at the foot of the Northern Mountain Range. Its former royal residence, La Cartuja, is the first stop on your tour. The residence became a Carthusian monastery in the Middle Ages and your guide will show you the chapel, a pharmacy, and the monks’ library. Valldemossa’s shining moment was in 1838, when George Sand and Frederic Chopin came to live at the monastery. Their stay here is well documented and a collection of their furniture remains. George Sand later wrote a book about their time here, entitled “A Winter in Majorca.” During free time, you will have the perfect opportunity to taste the typical sweets from Valldemosa called Coca de Patata, an individual sweet cake made with potatoes. Tarragona: Reus Modernista
Reus is the birthplace of famous people throughout history as the universal architect Antoni Gaudi, the painter Mariano Fortuny, the sculptor Joan Rebull or General Joan Prim. You will take a guided tour of the buildings of the city. You will have a  drive to Reus where you will see the Modernist buildings they are so proud of, including the Institute Pere Mata  which houses works of Domenech i Montaner, considered one of the best architects of European Modernism. You will have a guided tour  inside the Pavilion and see the work of the architect Lluís Domènech i Montaner.  The tour will continue with the Catalan Modernist route, a pleasant stroll through the center of Reus where you can take in the most interesting Catalan Modernist façades in the city. Special highlights include works by Lluís Domènech i Montaner, structures designed by Pere Caselles, who worked with Domènech, and the works of Joan Rubió i Bellver, a disciple and colleague of  Antonio Gaudí.  The Catalan Modernist tour will end with a guided tour of the Gaudí Centre. Due to the importance of its Catalan Modernist heritage, the city of Reus is part of the Réseau Art Nouveau Network, a network of cities with the most significant Modernist heritage sites in Europe. Tarragona: Walking Tour
You will board your motor coach for the short ride to beautiful Tarragona, which has been declared a UNESCO World Heritage Site. Your walking tour will start at the Roman walls with the three old towers that still remain in Tarragona: Arquebisbem, Minerva and Cabiscol Towers. The walls were constructed with megalithic blocks of stone and used to be 2.5 miles long. Your tour will continue towards the Cathedral, considered to be a rare example of a mixture of Romanesque and Gothic architecture since it was constructed between the 12th- 14th centuries. One of the highights of this Cathedral is the main façade, which is still unfinished, and hass an impressive rose-colored glass window. You will continue your walk past Gothic arcades, the market area during the Medieval Age and the Provincial Forum Walls dating from the Ist century A.D.  You will see the Roman Amphitheatre dating from the 2nd century A.D. and was the place where Romans held their public shows. Palma de Mallorca, Valldemossa Village & Chopin with Tasting
A short motor coach drive past olive trees and local vegetation brings you to the quaint 14th century village of Valldemossa, located at the foot of the Northern Mountain Range. Its former royal residence, La Cartuja, is the first stop on your tour. The residence became a Carthusian monastery in the Middle Ages and your guide will show you the chapel, a pharmacy, and the monks’ library. Valldemossa’s shining moment was in 1838, when George Sand and Frederic Chopin came to live at the monastery. Their stay here is well documented and a collection of their furniture remains. George Sand later wrote a book about their time here, entitled “A Winter in Majorca.” During free time, you will have the perfect opportunity to taste the typical sweets from Valldemosa called Coca de Patata, an individual sweet cake made with potatoes. Mahon, Ancient Sites - A UNESCO Partner Tour
This tour will offer the opportunity to visit several archaeological sites of the Talayotic culture of Menorca, a candidate to be declared a World Heritage Site by UNESCO in 2021. In addition, Menorca has already been declared a Biosphere Reserve back in 1993 by UNESCO. The chosen archaeological sites are set in very well preserved rural and natural environments, currently managed as farms. The first visit will be in the prehistoric village of Cornia Nou, located near Mahón city. Different talayots –like towers- and temples were built on a little hill. You will have the opportunity to see several monuments ranging from the Bronze Age to the Romanization of the island. You will make a stop in a local cafeteria to have a snack. Then, visit the site of Rafal Rubí (Alaior), an emblematic bronze age funerary monument, unique of the island of Menorca. You will see the funerary chambers and the funerary rites will be explained by an archaeologist. Visit the taula temple enclosure of Trepucó (Mahón). Here you can see the talayot, like a big tower built with large cyclopean stones, and behind it, you will admire a large taula and a beautiful sanctuary surrounded by a 18th century defensive wall, made by the Spanish army when Saint Philips Castle was besieged by the Spanish troops in the year 1782, when the island was under British goverment. The prehistoric wall that is surrounding the village was remodeled and improved, following canons of the influence Carthaginian fortification. Also, a magnificent talayot –a big prehistoric tower- can be seen at this site which stands out as having one of the most spectacular taula sanctuary enclosures.

Mahon, Hiking in Menorca
Hiking is perhaps the perfect way to discover the beauty of the island of Menorca—a  UNESCO World Biosphere Reserve. With an intensely interesting history carved into the landscape throughout the ages, Menorca offers virtually endless possibilities for trekking and the characteristics of the landscape are so varied that every walker will find a route practically made to measure. The north coast offers some of the most stunning hiking trails on the island. You’ll take the route that connects Cala Pregonda with Cap de Cavalleria, heading first in the direction of Fornells and meeting the trailhead at the Caballería beaches. Your first stop will be at Cala Mica, where a narrow beach offers the first chance to enjoy the crystalline waters of Menorca. From there your walk continues to Binimel-là Beach. Here, fine and coarse sands are deposited together by the winter tramontana winds, but in summer the sea is very calm and the water clear and fresh. Another 90 minutes of walking brings you to Cala Pregonda’s coastal scenery of rocky outcroppings and picture postcard crescent of golden sand. There’s time to relax here and enjoy a swim before you return to the ship in Mahon.

This is an off road adventure on 4x4 jeeps following interior and hidden paths You will be accompanied by a knowledgeable guide who  will explain each site are visiting. The beautiful peninsula of Cap Corse is a ribbon of sheer coast along a fault line, suspended at an altitude of 3,280 feet. Between two seas. Your journey from Bastia will lead inland to Oletta – a small village terraced up the hillside, and from where there is a lovely view of Saint Florent and over  the countryside of olive groves, vineyards, and pastures – small squares of property delimited by dry stone walls. Then the road climbs up to the San Stefano Pass, through chestnut and olive groves, and from there is a spectacular panorama down to the east coast and the Biguglia “étang” (pool) and in the other direction, across the Agriates Desert and the sea at Saint Florent.  You will climb a sinuous, narrow road, up to the Teghime Pass, where at an altitude of 1,759 feet ( 536M), the views are completely different in each direction. To the West: over extensive vineyards right to the gulf of Saint Florent. To the South: across mountains and valleys towards the chestnut forests of the Castagniccia. The East: past Bastia and the sea leading to Italy. Finally North: the mountainous backbone of the Cap Corse. The road turns and twists its way down to Patrimonio, offering picturesque views background. Patrimonio village is dominated by its church and high steeple (built in 1749). Of course, it would be impossible to be in the finest wine producing region of the island, without having a wine-tasting session!

Bastia, Corte
In the heart of the island, half way between Ajaccio and Bastia stands Corte, raised slightly above the floor of the valley by its position on a hill. On the eastern slope, the quarters of the old town rise in steps up to the ramparts of the Citadel which, perched on a rock outcrop, towers over the confluence of three rivers. Being the only inland military stronghold in Corsica, Corte established itself as the strategic crossroads, controlling all of the inland areas of the island.  You will board a little train which will bring you up to the city of Corté.  Your tour will  begin at the end of Cours Paoli in Place du Duc de Padoue and the statue of Jean Thomas Arrighi de Casanova .  Just above here is the Place Poilu where Napoleon's parents once lived. To the left you will see the Palais National, the administrative building that’s ground floor was for a long time used as a prison. With the re-establishment and inauguration of a new university in Corte in 1981, the Palais National became a Centre for Corsican Studies and now houses that institution's library.  You will climb steps which follow the walls of the citadel, and reach a viewing point with a magnificent view of Corte and its environs. The rocky outcrop of the citadel can clearly be seen, as can the Eagle's Nest built in 1419 by the viceroy of Corsica. Today the citadel houses the Musée de la Corse and the Fonds Regional d'Art Contemporain. You will have time to take a stroll by yourself for souvenir shopping,
