Tangier: Cooking Class at the Blue Door
Moroccan cuisine is considered one of the most important cuisines in the world. The cuisine of the first inhabitants, the Berbers, still exists today in the staple dishes like tagine and couscous.  The Arab invasion brought new spices, nuts and dried fruits, and the sweet and sour combinations that we see in dishes like tagine with dates and lamb. The Moors introduced olives, olive juice and citrus while the Jewish-Moors left behind their sophisticated preserving techniques that we see in the frequent use of preserved lemons, pickles, etc.  The Ottoman Empire introduced barbecue (kebabs) to Moroccan cuisine. The French colony, although short-lived left behind a culture of cafes, pastries, and even wine.
Over time, cooks in the kitchens of the five royal cities (Fez, Marrakesh, Meknes, Tangier and Rabat) have developed and perfected the dishes that blend each of these distinct tastes. Every Moroccan dish has its place in society and varies with the market, the season, and the region. Your first stop will be the Grand Socco, home to a cavalcade of color, charm, street musicians, a fish market, scenic handicrafts, and spices. You will then proceed to Blue Door Hotel Cooking Classroom, where you will be welcomed with Moroccan tea followed by a cooking lesson of a very traditional Moroccan dish,  learn how to make the traditional Moroccan bread and take it to a local oven. In the meantime, while waiting for the bread, you will learn how to make and serve a real Moroccan tea. Once food is ready, enjoy lunch and this authentic experience. Depart for your ship  with the knowledge needed to impress at your next dinner party.

Please note: Wear comfortable, flat  walking shoes. Bring sunglasses, sunscreen, hat, local currency.

Tangier: Full Day Chaouen
Tangier is a fascinating Moroccan city to visit. It has many of the things that travelers love – a sense of exotic mystery, interesting history, beautiful vistas, unspoiled beaches, and friendly people. It is an interesting mix of North Africa, Spanish, and French cultures. You will have a 2-hour drive via Cap Malabata and Tetouan toward Chefchaouen for some sightseeing.  You will start your tour with the inside visit of the Old Kasbah in the medina. The Kasbah of Chefchaouen was built in the early 18th century by the legendary ruler Moulay Ismail. It is fairly simple without architectural surprises however it is surrounded by gardens on the interior and exterior. Inside the Kasbah, you can visit the ethnographic museum containing antique weapons, musical instruments, and photographs of the old town. You will explore the blue-washed town (old medina) by foot along with your guide who will share stories of Chefchaouen’s history. You will have a photo stop to take pictures of a panoramic view of the Hispanic flavored town lined with blue and whitewashed houses, tiny balconies, tiled roofs and patios embellished with citrus trees.  Visit the cobbled main square, Plaza Uta el- Hammam where you will have some free time for shopping and where the striking 15th century Grand Mosque sits. The Mosque and its nearby buildings were built by Jewish refugees, who alongside Muslims escaped the Spanish persecution to Chefchaouen.  Enjoy Moroccan mint tea at a local venue while your guide shows you this unique city.  You will have lunch at an authentic and charming restaurant before returning to Tangier.

Please note: Wear comfortable walking shoes. This tour is not wheelchair accessible nor suitable for guests with mobility issues.  Bring sunglasses, sunscreen, a hat,  and local currency.

Tangier: Full Day Lixus Ruines Larache
Board your coach and drive to the town of Larache which is around 2 hours away from Tangier on the north of Morocco’s Atlantic coast. En-route, you will make a stop at the Ruins of Lixus. The ruins of the ancient city of Lixus serve as a fascinating reminder of the area’s past. These Roman ruins, a popular attraction in Morocco, are set in a very picturesque area on a hill with the Loukkos River winding through the open fields and marshes below and forested hills to the north.  The site of the ruins of Lixus was extensively excavated between 1948 and 1969, during which time some restoration took place. After an international conference held in 1989, in which many scientists, historians and archaeologists participated, the site was partly enclosed in order to undertake a study of the mosaics found on the site. Interestingly, one of the large mosaics discovered represented Poseidon – the Greek god of the sea, horses and earthquakes. These excavations covered approximately 20% of the 75 hectare area of the Lixus ruins. After an interesting visit of the ruins, continue to Larache for a short walk through the old medina before savoring a local lunch. After lunch, continue to Azilah. Throughout history, the small coastal city of Azilah has been coveted by both Portugal & Spain, and thus has been a longstanding scene of great bloodshed. The city is well known for its enormous cultural and artistic contributions to Morocco’s history. Every summer, the international festival of Azilah attracts thousands of people from all over the world. Take a walk through the old town with its narrow streets to learn about Azilah’s fascinating history.  It is one of the most beautiful seaside resorts on Morocco’s Atlantic coast, especially during the summer, with so many desert and quiet plagues, Mediterranean architecture of the houses (painted in white and blue), the gentleness of its people, museums and street-artists from around the world.  After visiting this beautiful town you will enjoy a refreshment stop at a local resort before returning back to Tangier.

Please note: Wear very good hiking shoes, bring sunglasses, sunscreen, hat, and local currency.

Tangier: Full Day Tangier & Tetouan
Disembark the ship and depart by air-conditioned coach for a drive to Cap Spartel, one of the promontories projecting into the waters of the two seas. It looks towards the Atlantic and the setting sun and is where the Atlantic Ocean meets Mediterranean Sea. The Hercules cave has two openings, one to sea and one to land. The cave itself is part natural and part man-made.  You will re-board the coach for a short drive to the entrance of the Kasbah, before beginning a comprehensive walking excursion through one of Tangier’s most historic and architecturally interesting areas. The Kasbah area is spread across the highest point of the medina, and your guide will lead you on an uphill walk while pointing out special buildings and suggesting good places for photos. Once at the top you will find yourself in an area much unchanged since the Roman times. The Kasbah Museum is newly renovated and focuses on the history of the neighborhood. You’re sure to enjoy the traditional courtyard, the various displays and the large mosaic works or art on display. Your guide will lead you into one of Tangier's most colorful and bustling areas, the Grand Socco (Souk). It is the center of things and the link between the medina and the new city.  You will then drive to Tetouan, to tour the old Royal Palace, a 17th century building closed to public entry but its main ornate gate Bab Er-Rouah can give you a mental idea of what is beyond. Hassan II Square is situated where the historic and modern parts of the city converge to create the heart of the town. Join a guided walk through the Medina which is a UNESCO World Heritage Site. You will have the opportunity to visit the Bab Akla School of Traditional Arts and Crafts. Tetouan’s famous School of Plastic Arts, the first of its kind in Morocco, has produced some of Morocco’s best painters over the past half century. The city stands out for the beauty of these traditional arts including embroidery, cuisine, zullayj or mosaics, and carved and painted wooden objects. The scholars of the school are all children that come from disadvantaged backgrounds and the skills learned give them a new opportunity for success in their future. Your entrance fees go directly to maintaining this wonderful initiative.  Enjoy a typical Moroccan lunch in a beautiful Riad in the Old Medina of Tetouan. Time permitting, you will have some time at leisure for shopping before returning to the ship.

Please note: Wear comfortable walking shoes. This tour is not wheelchair accessible nor suitable for guests with mobility issues.  Bring sunglasses, sunscreen, a hat,  and local currency. Kasbah Museum is closed on Tuesdays, so the visit to the Museum will be replaced with the American Legation Museum, a very important venue with a compilation  of artifacts and documents that tell the history between Morocco and the Unites States.

Malaga by Segway
Some things are just plain fun and riding a Segway around Spain definitely falls into that category. It takes a few minutes to get the hang of it; then you'll never want to get off! You'll begin your ride (after an introduction to the operation of the Segway) at Plaza de la Marina, in the center of Málaga. Continue to Larios Street, the main shopping avenue of the city, then on to Merced Square, at the end of Calle Alcazabilla, to see the obelisk erected as a tribute to General Torrijos, currently the headquarters of the Picasso Foundation. Next you will ride to the Santiago Church, built on the site of a former mosque and Málaga's oldest church (founded in 1490). You’ll also visit the Roman Theatre, discovered in 1951, which was built in the time of Caesar Augustus and used until the 3rd century A.D. After that time, it was used as a quarry by the Moors to restore the Alcazaba, which is the next stop on your tour. This impressive building, constructed mainly in the 11th century, was the palace/fortress of the ruling Muslims. Continuing on your tour, you’ll see the Catedral de la Encarnacion, Bishop Square, and the Paseo del Parque, before returning to Marina Square.

Please note:  This tour is not possible for people confined to wheelchairs.  The minimum age to participate is 10 and participants must weigh between 66 and 265 pounds. Helmets will be provided. Participants must sign a waiver to go on this excursion.

Ibiza, Can Maymo Winery
Board your motor coach for a drive through a green hilly landscape. Can Maymo Winery is one of the largest wine producers on the island. This winery grows its own grapes and produces its own wine on site. The Phoenicians first grew grapes on Ibiza. Nowadays, Cabernet Sauvignon, Tempranillo, Merlot and Syrah are grown here in addition to the traditional varietals such as Monastrell and Malvasía. In the winery, modern production techniques and high ecological standards are teamed with traditional methods and aging processes to produce wonderful wines. In the bodega, you will hear an explanation of the production and blending process responsible for producing their quality wines. Enjoy a tasting of different wines with typical Ibizan snacks such as local bread, sausages, local cheese, ham, and olives. Next, you will visit Santa Gertrudis, a quaint village where you will have the opportunity to take pictures, visit the tiny town center or do some shopping. After this you will return by coach to the pier.

A panoramic drive brings you to El Soto, high atop the rock that is D’alt Vila (Ibiza's Old Town). This very beautiful, fortified town-within-a-town boasts an imposing castle and cathedral at its summit. The town's walls date from the end of the 16th century, but the site of Ibiza’s Old Town has been essential to the island’s defenses and administration for more than 2,000 years. You will be amazed at the stunning views over Ibiza’s sister island, Formentera and the port of Ibiza. You will walk from the top of D’alt Vila, through tiny whitewashed alleys and a series of cobblestone streets and courtyards, to visit the 13th century Maria de les Neus Cathedral and the Diocesan Museum. The cathedral is a very visible, simple tower whose silhouette can be seen for miles. You will also visit the Puget Museum and see the Dominican Convent (now the Town Hall), the Chapel of San Ciriaco, and the Episcopal Palace (now the Bishop’s Residence). Board your coach and travel to your first stop at the circle-shaped 14th century Bellver Castle, one of the world’s very few rounded castles and the only one of its type in Europe. Before returning to the yacht you will stop to see the unique style and architectural engineering of the city’s famous bullring.

Palma de Mallorca, Tapas in Palma
This gastronomically delightful tour will introduce you to the local tapas culture – a phenomenon dating as far back as the 13th century that has been “adopted” from the mainland tavern tradition. Tapas is a Spanish word meaning “appetizers,” although the interpretation is not exact, as tapas are often combined to make a meal. Palma is a city open to the sea, filled with charming streets and the hustle and bustle of everyday life. Enjoy a brief orientation tour with a stop at Bellver Castle that dominates the city of Palma. Its circular ground plan (the only existing one in Europe) is a unique example of Gothic military architecture. Next, enjoy tapas at three of the best bars in Mallorca, each with a different ambiance and style of food. Don’t eat a large breakfast, as you will need room to enjoy these delicious taste treats. You will also sample a typical dessert before returning to the ship.

Please note: Although the tasting will vary seasonally, you can expect to enjoy beer, wine and typical tapas. Spanish law requires motor coach passengers to wear their seatbelts in vehicles that are so equipped.

Palma de Mallorca, Valldemosa & Chopin
A short motor coach drive past olive trees and local vegetation brings you to the quaint 14th century village of Valldemossa, located at the foot of the Northern Mountain Range. Its former royal residence, La Cartuja, is the first stop on your tour. The residence became a Carthusian monastery in the Middle Ages and your guide will show you the chapel, a pharmacy, and the monks’ library. Valldemossa’s shining moment was in 1838, when George Sand and Frederic Chopin came to live at the monastery. Their stay here is well documented and a collection of their furniture remains. George Sand later wrote a book about their time here, entitled “A Winter in Majorca.”  During free time, you will have the perfect opportunity to taste the typical sweets from Valldemossa called Coca de Patata, an individual sweet cake made with potatoes. The drive back to the ship will give you the opportunity to view the impressive cliffs to the north.

Please note: Comfortable shoes with rubber soles are recommended. Spanish law requires motor coach passengers to wear their seatbelts in vehicles that are so equipped.

Alghero Discovery
Discover why Sardinia is famed not only for its scenic beauty, but also its history dating back more than 3,000 years. Your sightseeing will begin with a 30-minute drive along the road linking the Gulfs of Alghero and Porto Conte to arrive at the archaeological site of Nuraghe Palmavera, with its 2-story stone towers. The main tower dates back to 1100 B.C., and features an irregular, elliptical-shaped fascia. The second tower is connected to a central courtyard. A defensive fortification surrounds the whole complex with four towers marking the boundary of an ancient village. You will then head to the scenic viewpoint of Capo Caccia, an excellent vantage point of sea and shore, before heading back to Alghero. As the Aragonese landed here during the 14th century, their Catalan influence remains vibrantly alive in Alghero’s streets, shops, language, lifestyle, food, and traditions. Your 1¼-hour guided walk will pass ancient monuments, old fortifications, historic buildings, and beautiful churches before concluding at the tender pier.

Please note: Comfortable walking shoes are suggested as there are cobblestone streets in Alghero.

Alghero, A Taste of Sardinia
Your tour begins with a panoramic drive to Capo Caccia, a short distance from Alghero on the southern point of a huge limestone triangle that juts out into the sea. It is famous for the underground labyrinth of mysterious caves discovered in 1700. After a short stop to admire the impressive view, you will continue on to a local winemaker’s farmhouse for touring and wine tasting. Afterwards, enjoy a walking tour of Alghero to discover the town’s churches in their fascinating Catalan-Gothic architecture, the towers and wall which surround the old town and the Aragon palaces overlooking the main square. Alghero was one of the most important towns in the history of Sardinia: the Aragonese landed here in 1353 and the Catalan influence is still felt in its streets, shops, language, food, and traditions. At the end of your tour, return to your waiting Windstar yacht.

Please note: Wear comfortable shoes; portions of the walking tour in Alghero are over uneven cobblestones.Order of sites visited may be reversed. European law does not allow children under the age of 18 to consume alcoholic beverages.
